With the redesign. Twitter has removed the old setting to change your profile colour.

But you can still change it just for yourself

This feature is listed as a new option called “display” on your profile menu

It’s the one right at the bottom just before the log out button.

So the colour of your profile now depends on the other person’s settings rather than being something you seem able to set yourself. You get a choice of 6 pre-built colours as well as 2 dark mode varients.
